I really LOVE a quick all-in-one meal that my family raves about yet requires very minimal effort. Add a bonus of being super healthy and you’ve got my Easy Chicken Spinach Casserole! I have read countless recipes and take a little of what I like and change it to suit my family needs and tastes. Feel free to tweak it to your tastes. Cooking is meant to be enjoyed and flavored by our unique personalities! I tend to lean to the cheesey side of life–as you will come to find out! 🙂
1 lb of your favorite pasta (I love this recipe w/bow tie or penne pasta noodles) 12-16 oz. all-natural white meat canned chicken (can also use fresh meat, but this will take the easy out! ) 1 12-16 oz. frozen spinach (we have found that organic spinach tastes the best!) 1 can petite diced tomatoes 2 green onions 1-2 tsp Italian seasoning 1/2 tsp garlic salt 1-2 cups low-fat mozzarella cheeseBoil water & cook pasta according to directions. Drain pasta and then place in 13 x 9 casserole dish. Add spinach, chicken chunks (drained) , tomatoes, cut up green onions, and about 1/2 of mozzerella cheese. Stir gently to combine until mixed together thoroughly. Add Italian seasoning & garlic salt to your taste. After combined, cover the top with mozzerella cheese. I also use a grinder all purpose seasoning that has no salt or msg. It has spices, sweet pepers, garlic, etc that enhance extra flavors. I usually save this for last and garnish it with this as well as a few leftover green onions on top! Bake at 350 for about 25-35 minutes until warm and melted.
Serve with homemade garlic bread for an authentic Italian taste that won’t break the bank or the diet (too badly if you cut back on the cheese.)
